What Makes Dulce de Leche So Special?

Every 11th of October, Argentina celebrates one of its sweetest traditions,  El Día Mundial del Dulce de Leche (International Dulce de Leche Day).

Created in 1998 by the Centro Argentino de Promoción del Dulce de Leche y Afines, this day honours the nation’s most iconic flavour and its role in everyday life.

Dulce de leche is milk slowly cooked with sugar until it becomes a glossy, caramel-coloured cream. Its smooth texture and rounded flavour come from the Maillard reaction (milk + sugar + heat), which gives it that unmistakable toffee-like depth, distinct from regular caramel.

 

A National Heritage (and a Lovely Legend)

In 2002, dulce de leche was officially declared part of Argentina’s Cultural and Gastronomic Heritage, recognising its deep roots in our food identity.
Legend has it that in 1829, during a meeting between Juan Manuel de Rosas and Juan Lavalle, a servant forgot sweetened milk on the stove, and when she returned, she found the creamy delight we now know as dulce de leche. A happy accident that became a national symbol.
