Picanha (Rump Cap)

Cut from the top of the rump, Picanha is a prized beef cut across South America, celebrated for its exceptional tenderness and bold flavour. Also known as rump cap, sirloin cap, or coulotte steak, it features a generous fat cap that renders beautifully when cooked, infusing the meat with deep, juicy flavour.

Triangular in shape and naturally lean with subtle marbling, Picanha offers a wonderful balance of texture and richness. It’s ideal for barbecuing whole, slicing into thick steaks for the grill, or roasting to medium-rare perfection. Whether you're cooking over fire or in the oven, this cut delivers mouthwatering results at great value – no wonder it's a staple at every South American-style barbecue.

Cut To The Steak

Wagyu beef is world-renowned for its extraordinary marbling — fine strands of intramuscular fat that melt during cooking to create a rich, buttery texture and deep umami flavour. This natural marbling also helps keep the meat incredibly tender and juicy, setting Wagyu apart from other beef.

Wagyu cattle are raised under careful conditions that prioritise animal welfare and long-term health. This slow-rearing process — combined with the breed’s unique genetics — produces exceptional beef with unmatched flavour and tenderness. The high level of marbling, rarity, and strict quality grading all contribute to the premium price.

The BMS is a grading system that measures the level of marbling in beef on a scale from 1 to 12. The higher the number, the more marbled, tender, and flavourful the meat. Our Wagyu boasts an excellent BMS for a truly indulgent experience.

While Wagyu originated in Japan, our beef comes from specially selected Wagyu herds raised on the lush pastures of Argentina. These cattle are grass-fed, ethically reared, and handled with care to ensure exceptional quality from farm to fork.

This is a common myth. While some traditional Japanese farms have experimented with massages or beer, it’s not a requirement — and it’s not part of our process. Our Argentinian Wagyu cattle are raised naturally with a strong focus on wellbeing, resulting in outstanding beef without gimmicks.

Keep it simple to let the marbling shine. Sear your steak in a hot pan with a touch of oil and finish with Celusal Semi-Coarse BBQ Salt (available from us). Medium-rare is ideal. Let it rest before serving, and pair with chimichurri, grilled vegetables, or roasted potatoes. For drinks, a bold Malbec is the perfect match.

Our Wagyu steaks are dispatched frozen to preserve freshness. It will start to thaw out during the delivery process. Once defrosted, we recommend keeping them chilled and consuming within 2–3 days, to maintain the best texture and flavour. We do not recommend refreezing once thawed out.
