Ingredients for Alfajores de Maicena


For the Biscuits:

200g unsalted butter (softened)

150g granulated sugar

3 egg yolks

1 tablespoon vanilla extract

1 teaspoon lemon zest

300g cornflour (maicena)

100g plain flour

2 teaspoons baking powder

1/4 teaspoon bicarbonate of soda


For the Filling:


Dulce de Leche Che (1kg) – rich, creamy, and authentically Argentinian

For Decoration: Desiccated coconut


Instructions


Prepare the Dough

1. In a large bowl, cream together the butter and sugar until pale and fluffy.
