Argentine Rump Steak (Cap On) – Bife de Churrasco

Few steaks deliver the kind of bold, satisfying flavour that Bife de Churrasco does. A true staple of the Argentine asado, these steaks have fuelled generations of wood-fire cooking. Order a "churrasco" at any Argentine restaurant, and this is the very steak that will land on your plate — rich, beefy, and built for high heat.

We worked with our Argentine farming partners to hand-pick premium Argentine Angus cattle, raised on the lush, open plains of the Pampas. Grazed on grass and finished on high-quality grain, the result is a clean, beefy taste with a depth of marbling rarely seen on rump steak. That marbling melts during cooking, keeping the steak juicy, tender, and full of character from edge to edge.

Cut from the rump and hand-finished by our master butchers, each steak is unique in shape. A natural result of the cut and a mark of honest, traditional butchery. The fat cap is left on intentionally. This allows it to be rendered down as it hits the heat to naturally baste the meat, creating a caramelised crust and layers of flavour you simply cannot rush.


Cooking Suggestions & Wine Pairing

Cook over intense, direct heat, seasoning generously with salt and searing hard on both sides for a deep, caramelised crust while keeping the centre pink and juicy. Rest for at least 5 minutes after cooking and always slice against the grain. Serve with a generous spoonful of chimichurri for an authentic Argentine finish. A Malbec is the perfect drink pairing, as it cuts through the rich marbling and complements the beef with its dark fruits and smoky notes.

Bife de Churrasco (Rump Steak)

Bife de Churrasco is cut from the rump, located at the rear of the animal between the loin and hind leg. Naturally leaner than ribeye, it is prized in Argentina for its bold beef flavour, satisfying texture, and ability to deliver excellent results over high heat. It is one of the most commonly served steaks in traditional parrillas and asados.

Unlike more uniform cuts, rump has a more natural shape, meaning each steak can vary slightly in thickness and size. Typically cut into generous 300–400g portions, it is designed for quick cooking on the BBQ, grill, or in a hot pan while still delivering a juicy, flavour-packed result.

The cut is finished with the fat cap left on, which renders during cooking to naturally baste the meat, enhancing juiciness and creating a rich, caramelised crust. Combined with its grain-finished marbling, this gives Bife de Churrasco its signature balance of bold flavour, tenderness, and succulence.

Your order is vacuum-sealed for freshness and packed in an insulated thermal box with ice packs. This keeps the meat chilled for up to 48 hours during delivery to ensure it arrives in perfect condition.

Please note frozen products will begin to thaw during delivery, as our boxes keep items cool but not fully frozen.

We deliver to most of mainland UK (England, Wales, and parts of Scotland).

If the cut you purchased is fresh, then yes—you can freeze it. Our thermal boxes are designed to keep products cool during delivery, maintaining a chilled temperature for up to 48 hours in transit.

Please note that our boxes are not designed to keep frozen products fully frozen during transit. Frozen items will begin to thaw once dispatched from our warehouse, even when packed in thermal boxes with ice packs.

If your product is frozen and arrives thawed out, we do not recommend refreezing it. Instead, cook it as soon as possible. After cooking, you can freeze your dish and store it in the freezer for later use.

While some of our meat products have a long shelf life, we don’t recommend storing them in a domestic fridge for that full period. Frequent opening causes temperature fluctuations that can affect freshness.

Our warehouse uses commercial refrigeration to keep meat at the optimum temperature. Once delivered, if you plan to use it within three days, it’s fine to keep in your fridge.

If you won’t cook it within three days, we recommend freezing it to lock in freshness and flavour. When ready to use, thaw the meat in the fridge for 24 hours to keep it cool and safe.
